Man, it seems like forever since I've been on here! Moving sure takes up a lot of time. :) Thankfully it went extremely well. Our "20 -30 Something Year Old" Community Group helped us move out one night and it sure was a blessing! Almost everything got moved that night and we celebrated by eating pizza and some yummy cookies. Now I am finding out that the hard part is reorganizing and deciding where to store everything...... still working on that. But I have had time to try out some new recipes and they have all turned out pretty well. Except for the Yogurt Baked Chicken, sounds weird but I thought it would be good and it didn't taste as good as I had hoped. :( Tonight I made Roasted Potatoes with Rosemary. My mom had a bunch of Better Homes & Gardens magazines that she wanted to get rid of, so I went through them and cut out pictures of decorations, food, and house ideas (which I love doing!). I found this recipe in there and thought it looked delicious! And it turned out very yummy and very easy! So here is the recipe, in case you want a taste. :)
Roasted Potatoes with Rosemary
Makes 4 Servings
Prep Time: 5 minutes
Cooking Time: 35 minutes
3 Tablespoons Olive Oil
1 Tablespoon Chopped Fresh Rosemary
1/2 Teaspoon Garlic Powder
Salt & Pepper, to taste
2 Potatoes, cut in half or fourths
(red skin, Yukon Gold, fingerling)
Heat oven to 425 degrees F. Coat 15x10 inch baking sheet with no-stick spray. Stir together oil (I used Vegetable Oil, cause I didn't have any Olive Oil), rosemary (again, I used dried, because I didn't have any fresh), garlic powder, salt and pepper in a large bowl. Add potatoes. (now I used small red potatoes because that is what I have right now. I believe I used about 4-5, enough to fill in the pan.) Toss well until coated. Spread evenly in prepared pan. Bake 30-35 minutes, stirring occasionally until potatoes are fork-tender and golden brown.
